Tuesday started off on a productive note, with a bike ride to Kickboxing class. For the one-on-one, I picked the heavier bags because I was feeling… daring? They really made such a difference!

A few snacks before Vanpolio: almonds, cheerios, grapes

Bike > Get ready for work > Vanpolio > Work… Except somehow in that timeline I forgot one very important thing – my SHOES!

Thumbs down!

It was kind of awkward walking into my building barefoot, I think the military linguists looked at me sideways and there was definitely a senior exec who questioned my lack of shoes walking from the elevator to my desk….

“It’s a long story,” I say. (But really, I’m just a space cadet/barefoot hippie). Lucky for me I have a SHOE DRAWER at work! I also keep a blanket and 2 button-up Express shirts on hand, just in case.

Peachy Breakfast

I added sliced peaches to my bowl of oatmeal/oat bran and loved the addition. I’d do that more often, but I keep it simple and usually only have bananas at my desk. I really should invest in some frozen blueberries or something!

Wannabe Curry Lunch

Lunch was the same mix as yesterday, but since the flavors had even longer to mingle it tasted even MORE like a fancy Thai curry broth, score!

  • Mexican tortilla soup (canned)
  • Asian stir-fry vegetables with asparagus (from a frozen bag)
  • Black beans (canned)
  • Brown rice
  • Tahini (eyeballed it – between 4 and 6 T)

Snack Time!

Around 3 I started to fuel up with a bunch of random snacks because my evening plans were set up so that I would drive straight from the Vanpolio drop-off to Los Gatos Pilates.

  • Half of my peach (from the oats)
  • Carrots + Greek Yogurt
  • Into almost empty Greek yogurt went oatmeal + blackberry preserves (ate in Vanpolio)
  • Hard-boiled egg (ate in my car driving to Pilates)
  • Fuji apple (bought it at Lunardi’s on my way to Pilates)

That was more than enough fuel for the Pilates class that I was DENIED entry to!! After driving all the way over there AND waiting 20 minutes for the current class to end, the teacher (not owner) said that because the class was intermediate/advanced, and I have zero Pilates experience, she “just couldn’t” let me take the class.

I assured her I could handle it & that I have a background in dance, floor barre (k, that was a leeeetle bit of a stretch because it was high school, whatevs), I run all the time, and I do weights training (hey, that one day I did in the past 2 months counts for something, right?)….

She wasn’t having it. That made me angry. I waisted basically my whole night! They better let me try an int/adv class after I take the beginning class tonight (Wednesday) and the mat class tomorrow morning (Thursday)….

So…. I drove all the way home and made more snacks! DUN DUN DUNNNN

1. Ripped apart 2 tortillas, coated them in lime juice, salt, and a few shakes of red pepper. They went in the oven for 6 mins a side at 400 degrees.

2. Next up, a batch of baked sweet potato fries. I saved half for a snack today and ate the other half with (don’t judge) chipotle mayo. I used Kristin from IGE’s recipe, but found I had to roast them for an extra 10 minutes + broil for an extra 2 minutes per side bringing the total roast time to 20 mins and broil time to 4 mins/side.

Side note: Nicole, if you go buy detergent, you should also pick up some ketchup!
3 & 4 & 5. Despite some popcorn and Cheerios, I was still unsatisfied! WTF. So I hit up the blogosphere for another recent concoction, this time one of Kelly from Foodie Fresh’s breakfast cakes.

I didn’t have any milk, so I used water and olive oil (bad idea) and instead of oat bran I used buckwheat flour and oat flour. As you can see, I topped this with white chocolate chips and peanut buttter.

I think my additions dried out the cake, so basically the top + toppings were the only edible part. Shucks.

I planned my night to be fitness-y but after the Pilates denial, it turned into a snacktastrophe. I really need to stop stop stop doing that!! BTW – This was yet another small screen night…. I finished PLL and caught up with Secret Life. Maybe too much TV = snacktastrophe? Hmmm….

Question: Do you stock up on stuff at work? Any other shoe drawer people out there?

Question: have you ever tried Pilates? Is it irrational to think I could jump into an int/adv class? You would know better than me!

  1. Aw, I’m sorry it didn’t turn out. Olive oil probably isn’t runny enough to substitute for the almond milk. Another good sub would have been yogurt or apple sauce. My rule of thumb with any kind of batter is that if it feels too dry, add a bit more liquid, but just a tiny bit and then decide if you need more. Recipe needs can change in bakin depending on your climate. It’s super humid here which means I might need less liquid. I hope you’ll try it again!
