Friiiiiiiiiiiiday. Yes.

Thursday Catch-Up brought to you by: 3 1/2 hours of sleep!

Yesterday I was saved by my iPod + Kindle app at the gym when I forgot headphones. No headphones = no music/no Food Network = yay, reading!!

After I completed a 5 minute warm-up and 3 miles running at an 8:30 pace, I ventured far from the cardio machines and did some leg presses, leg extensions, bicep curls, deadlifts, tricep extensions, pushups, hamstring ball curls, and crunches!

I went home and made two helpings of a protein chocolate-pb smoothie. Oh yeah, with frozen grapes + banana + mixed lechuga :)

This is one of those things my mom would scowl at because it doesn’t look pretty. Good thing it tastes amazzzzzzzing.

Then it was time to bake! FOUR Boo Radley’s Cupcakes flavors require a whole lot of of this:

SUGAR!

Nicole and the granulated good stuff…

Myself with the powdered version…

And here is 3/4 of the finished product! (the other flavor was in a separate container)

1. Top layer: BROKEN BLACKBERRY POCKET WATCH
vanilla bean cake with chopped blackberries and white chocolate chunks, blackberry buttercream, streusel topping

2. Middle layer: SCOUT’S OREO TIRE ROLL-A-RAMA
devil’s food chocolate cake with Oreo® chunks, cookies and cream frosting

3. Bottom layer: PICTURE SHOW, COOKIE DOUGH, LET’S GO!
yellow cake with chocolate chips, cookie dough center, cookie dough buttercream, and a chocolate chip cookie on top

4. Not pictured above: CHOCOLATE COVERED, BERRY BAD, CUNNINGHAM GANG
chocolate cake with choice of raspberry or strawberry puree, a berry buttercream, and hard chocolate coating

I had extra batter + frosting so I made a mini 4-layer cake…

Did I mention these cupcakes were for a wedding tasting? Nick + Tori are getting married sometime around February of next year. They are going to choose their favorites and hopefully pick Boo Radley’s Cupcakes to cater their wedding! :D

I dragged myself out of bed after less than four hours of sleep, took the Vanpolio to work, and made myself some oatmeal with protein powder swirled in…

Whoops, what about the swirl part?

Ahhh there we go.

What’s happening tonight? SLEEP. And Glee re-runs. And more reading. And lots of peanut butter.

  1. So many things I loved about this post! The scrumptious looking cupcakes (I think the BROKEN BLACKBERRY POCKET WATCH would be my favourite!), the fact that someone else’s mom also scowls at non-pretty amazing tasting things, oatmeal with swirled protein, and glee re-runs! Such a delight to read :)

  2. Whoa whoa whoa you have a CUPCAKE business? Those look ridiculously good! Do you deliver to SF? Can I order cupcakes for every function I go to from now on? (Sorry Susiecakes!)

My Friday night consisted of the same thing : sleep, catching up on TV, and peanut butter. (And cookies).

  3. Mmmm cupcakes… I actually rarely ever make my own, but I’m really into all the independent cupcake shops popping up. I’ve said it before, but your flavors are too cute! My birthday is coming up on tuesday and I’m really sad i can’t have chocolate covered, berry bad, cunningham gang!

  4. Oh my goodness those all look amazing!!
