Not much is going on for me this week. I plan to do a lot of relaxing, TV watching, sleeping, eating, and um… TV watching (you know why). Next Monday I start an internship and I’ll transition into working 40 hours per week. For now, I’m enjoying three great things… in addition to the activities listed above^

1) Pictures! I love using Lauren’s beautiful camera and wish I had one of my own. It’s amazing how much better everything looks when it is photographed with a real camera.

2) Cooking! Ahh, the joys of having access to a kitchen, fully stocked fridge/pantry, and plates/silverware. It’s a nice change from the paper plates I was using (and wasting) at the sorority house. I’ve been trying to eat smaller, healthier meals this week. Lots of quality protein, whole grains, veggies, and fruit.

3) Baking! I attempted to make some chocolate chip protein cookies, adapted from this Itty Bits of Balance recipe. I used Optimum Nutrition Double Chocolate whey protein powder and mini semi-sweet chocolate chips. I swapped egg whites for the egg, PB2 for the peanut butter (we are somehow all out of real PB), and sugar-free maple syrup for the agave.

Normally I am tempted to demolish cookie dough, but the raw oats kept me from digging in. I guess that’s a good thing, right?

The cookies had awesome nutrition stats, but they weren’t sweet enough for my liking and they definitely didn’t taste enough like traditional cookies. I’m going to rework the recipe, add some stevia and maybe replace half of the oats with whole wheat flour. That said, these cookies were a good sweet tooth fix- both my mom and Lauren liked them, too.

  1. There is nothing better than coming home to a clean kitchen, a fully stocked pantry and the freedom (and time) to bake/cook to your heart’s desire. All your food looks scrumptious and I can’t wait for that cookie recipe!

  2. Glad you enjoyed the recipe! Next time you have peanut butter on hand you should definitely try using it– I’m convinced that it makes ALL the difference!

  3. I have so many recipes that I’m just waiting for my summer to start so I can bake up a storm. Alas, it’s a little later than some, but I’ll be relaxing at the shore the whole time, so I’m not complaining!!

  4. Tv watching, relaxing and cooking all sounds fabulous! Live it up while you can!! And those little protein cookies do look delicious! I feel like I’m pinning healthy recipes all the time but I can’t think of any off-hand! Can’t wait to hear what you come up with though!
