A couple random rambles coming your way today…

Over the past few days, I have been transitioning from “omg I love free time” to “omg I’m so bored.” I’m definitely looking forward starting work next Monday!

That said, I have done a few noteworthy things this week. (Amidst the TV watching, running, cleaning, aaaand that’s about it. Exciting life I live.)

1. Last night, I joined David and my mom for Sam’s last high school orchestra performance. The concert was held at a local church and wow, talk about TALENT. Two and half hours of beautiful live music. Did you know that I used to play flute in middle school? Last night’s performers put my (long lost) skills to shame.

The closing set of the concert was performed by the jazz band. They were awesome! Their last song was a mambo mix, and I had the biggest urge to stand up and dance. Buuut, I didn’t.

2. Yesterday afternoon, I went to get coffee with my friend Madeleine. She is finally graduating from high school (it feels like forever since I went to school there) and I can’t wait for her to experience college craziness in Boston this fall! Any way, it was so great to see her. Every time we get together we talk and talk and talk and talk. After an hour of sipping Starbucks and babbling, we decided that another hangout sesh was necessary.

Today, we went out for lunch at a really classy restaurant. We headed to Chipotle and both demolished our veggie burrito bowls (even though they look like pure lettuce on lettuce with a bit of pico de gallo). Getting a veggie bowl is the best because the guacamole is no extra charge. Guacamole > Meat, especially considering Chipotle guacamole is laced with crack.

I was really craving soda (specifically the Coke Zero from the soda fountain), but I didn’t buy a soda cup. Madeleine surprised me when she specially refilled her cup with the magical caramel stuff… and added my very own straw. That is friendship right there. Germs and all ;)

We talked for a long time, enjoyed the sunshine, and probably scared the people sitting near us. Crazy stories and crazy girls.

And now for the important stuff….. but not really.

I have two really good, high protein, delicious, and satisfying snacks to share. When a bit of hunger strikes, it’s easy to grab a protein bar, reach for a handful of cereal, pop open a soda, or nosh on some other random pantry staple, but sometimes the extra effort of a “prepared snack” is worth the time.

1. Let’s start with savory first. Into the bowl went some non-stick spray (crucial or the egg will stick!!!), 1/2 cup egg whites, shake of pepper, and a shake of garlic powder. Microwaved for 2 minutes and then topped with some marinara sauce and heated for about 20 seconds.

Some good quality protein to fill you up. Kind of a random snack, but marinara and egg are surprisingly good together! Try it.

2. And now the sweet! I’ve been putting greek yogurt (sweetened with stevia and cinnamon) into my oat bran every.single.morning. To take it up a notch, I used some PB2 and stevia instead. Ahh, it was magical.

It tasted like peanut butter pudding, but in yogurt form. Ok, that doesn’t really make sense, but you get it. I’m surprised that no mainstream brands have invented peanut butter flavored yogurt yet. Soon enough, I’m sure it will be available. Until then… make your own :) I’m tempted to mix some up and freeze it. Fingers crossed that it tastes like PB frozen yogurt. Mmm.

Anddddd… that’s it for now.

  1. I’ve been loving sweet potatoes and peanut butter lately! It’s so quick and easy…sweet potato in the microwave for 3 mins, add peanut butter and tada!
