Hmm……. one of those things is not like the other… ;)

Sunday was a perfect day in my book.

It went like this:

Wake up –> Brunch at the Seascape Resort –> Monterey Bay Aquarium –> Outlet Shopping (notably Lululemon) –> Biking to the Grocery Store –> Family Dinner –> Cooking and Baking!

It was a full day, but perfectly relaxing at the same time…

We headed out towards the ocean at 9 in the morning and sat down for brunch about an hour later.  For 20 bucks each, we were able to stuff our faces, refill our plates, stuff our faces, and refill our plates. Sounds like quite a deal, right? Especially when the food was this good…

I had a plate with various types of salads, a TON of fresh fruit (apricots holla), and some roasted potatoes. Second plate had more salad/fruit, two poached eggs and half a whole wheat bagel.

Lauren said that the poached egg on top of the red snapper was delish.

And it didn’t stop there… Lauren and I wisely split a plate of desserts. It doesn’t seem like a lot when it is split down the middle ;)

My favorites were the cheesecake square (back middle) and the peanut butter mini brownie cake thing (front and center baby). You know I have a thing for chocolate and peanut butter together, but then again, who doesn’t? The red velvet cupcake was good too, but nothin’ like homemade!

From brunch, we took a tour of the resort because it might be a potential wedding location for our mom and David (!!!!!!!!!!!!!!!!!!)

I love this resort because it isn’t too far from home, the hotel suites are spacious and comfortable, there is classy family vibe, and the views are breathtaking.

Our next destination for the day was Monterey.

Sam wanted to visit to the Monterey Bay Aquarium as part of his belated birthday celebration, and of course we were game!

We had a fun time checking out the different fish and animals. My favorite part was the jellyfish… as always… they’re the coolest.

(we totally blend in…)

And can we just talk about the weather?! Lauren used to live near Monterey and told us that there are about 5 “perfect weather” days each year. We were so fortunate that we decided to visit on one of them!

After a bit more walking around, Lauren and I left to drive back to San Jose. On the way, we made a very important detour… to the Gilroy Outlets! Lauren was anxious to visit the new Lululemon outlet store, and I dutifully joined her.

We did some damage… I got a pair of black yoga pants and a long sleeve dri-fit shirt; Lauren got a pair of workout capris, a workout tank, and a jacket; and we picked up a jacket for my mom and a warm hoodie for Sam. Everyone was happy, but my debit card was crying a little bit.

Lauren and I changed into our new clothes when we got home and quickly biked over to the grocery store.  She needed to get baking supplies for an order of pistachio cupcakes, and I needed food for dinner and this week’s lunches.

It was difficult to bike because of all the food I was carrying! I’m surprised I didn’t fall over…

For dinner, David grilled some sausages and stuffed portobello mushrooms. I made a quick salad of spinach, strawberries, and fresh plums from our plum tree. I also steamed a spaghetti squash and covered it with artichoke & garlic pasta sauce and some fresh basil from our plant! Talk about local ingredients ;)

It was nice to dine al fresco… I can’t get enough of these summer nights!

After dinner, Lauren and I whipped up some food (and a giant mess) in the kitchen. Lauren made the cupcakes and her lunches for the week.

I made a double batch of Jamie Eason’s pumpkin protein bars and a triple batch of roasted veggies. We had the double ovens running and 4 shelves filled at one time!

I added in about 2 cups of shredded carrots to the protein bar recipe… sneaky sneaky. I also subbed stevia for xylitol and psyllium husks for 1/2 cup of oat flour.

After some late night snacking (quality control, duhhh), we hit the hay. We are trying to get in some early morning workouts this week… so we need that beauty rest.

  1. Omg that looks like such a tasty brunch… I’d be all over that dessert plate! And how fun that you went to the aquarium– the otters are always my favorite! And how have I never been to the Gilroy outlets??? A Jcrew and Michael Kors? And then best of all, a Lulu?? Clearly planning a trip there asap!
