Happy Friday everyone! Today is a special day – Kyle is one year closer to “old age.”

Happy Brithday, geezer!

Late last night we packed the Explorer to the brim (and beyond the brim!) with camping supplies for our weekend trip to Lake Shasta, which is about 5 hours north of the Bay Area.

There will be about 30 of us hitting the lake this weekend – volleyball, horseshoes, boating, rafting…. and the list goes on. (I will partake in said fun times after I find free wifi and work a day remotely!)

The fact that Kyle’s birthday falls on a day where all of our friends are together is a total bonus. Instead of baking cupcakes, I decided to make Kyle a birthday enchilada platter to share with everyone. He LOVES enchiladas and I aim to please :)

I followed this recipe from All Recipes nearly exactly, just multiplied the recipe by 6! (Which involved a little fudging on the canned items)

4 lbs. cheese + 80 tortillas (used 40)

diced green chilies + creamy things

chopped green onion + a lil butter + garlic powder

while 8 chicken breasts cooked in the oven, I started the sauce in the largest pot I could find… 45 minutes later, I added the chopped chicken into the cheesy, creamy mixture.

I set up my station:
1. Grab tortilla
2. Lightly coat in sauce
3. Scoop filling in center
4. Fold like an enchilada + place in platter
5. Repeat x20
6. Cover with extra sauce + shredded cheese
7. Repeat 1-6

Voila! 40 slices of enchilada birthday cake!!

  1. Ha, love your birthday enchiladas!! Mine is on Tuesday, so if you don’t mind or have any plans… can you fly to kuwait and make me some too??? They look delicious!
