Last Thursday Kyle and I flew to Denver to spend some time with his family and attend the wedding of his high school friend, Erik. The trip was SO MUCH FUN and we squeezed a lot in from my “Denver Wish List.”
Here’s what we did!
Thursday – beers, chili nachos, and the 49er game at the airport
Friday – After struggling through a 2 mile run at ~7300 feet, I got ready for a day trip to Boulder, CO with Kyle and his parents. The rain and fog followed us there, so it was nice to duck into the various shops on Pearl Street Mall for a little shelter. We ate lunch at the popular Mountain Sun Pub & Brewery. I had the panini special – turkey and cranberry – it was grrreat. Good beers too!
Friday Night – Erik and Alissa’s wedding in Morrison, CO. Highlights: meeting Kyle’s high school friends and hearing some of their crazy stories, the hilarious wedding ceremony (two judges officiated), cake!, fun dancing (try Kris Kross’ Jump in 5 inch heels).
Saturday Morning – DasHustlehoff 5k in downtown Denver… except it was only 2.7 miles. We watched a few rounds of competitive stein hoisting before the race started. We ran from Coors Field ballpark around downtown. The website describes the course as a “fast and flat route” but there were a few mini hills that took us by surprise. Scott carried bluetooth speakers in his backpack so we jammed to Katy Perry throughout the course.
Saturday – Bar/Pub Crawl post-race! We enjoyed the complimentary 5k Oktoberfest beers (did a little “stein” hoisting competition of our own), ate vegan sweets from Beet Box Bakery (thanks, Miranda!!), played life size beer pong at Viewhouse, and drank craft beers from River North Brewery and Epic Brewing.
So happy we saw Matt & Miranda on Saturday! Matt ran the 5k (and came in, like, top 10) and Miranda cheered us on with delicious pastries from a local vegan bakery. Sounds like they love living in Denver and after a day running around downtown tasting amazing beers, I can’t blame them!
Saturday Night – family dinner at Kyle’s parents’ house! Not a lot of pictures to document dinner, but it was all delicious. I couldn’t stop eating the sweet potato fries…. yum. After dinner, Kyle’s mom brought out a chocolate sheet cake and ice cream. The only thing better than dessert is watching Kyle’s nephew put his toy construction truck in his ice cream. ADORABLE.

Sunday Morning – 14er!!! We hiked up Mt. Bierstadt. There are 54 mountains that hit the 14,000 foot mark, and this is considered to be a “beginner” trail. Elevation at the trailhead is about 11,700 and elevation at the summit is 14,060. Total gain over 3 miles? Oh just 2,850 feet. (p.s. my Garmin clocked an elevation gain of 2,460.) Yowza. Although it was WINNNNNDYYY (they used to call this the Chicago Mountain!) we made it just about to the top and took in the view… gorgeous.

Sunday Afternoon – After our high-elevation hiking, we stopped in the cute mining town of Georgetown for lunch at the rustic Lucha Cantina. Suddenly my phone decided to get all steamy so the food photos didn’t turn out so well. Trust me, our selections were fantastic!! Kyle and I split the Lucha Libre enchiladas (bacon, jalapeño, onion, chipotle cream cheese & jack cheese; smothered in pork green chili & queso) and the humongous King Carl burger (pork green buffalo chili smother, w/guac, onion & cheese). We were stuffed all day.
(Sorry for the bad food photos, my phone has been acting so strange lately! New phone in T-minus 35 days!)
Sunday Night – We watched the Broncos game at Kyle’s parents’ house, ate some leftover chocolate cake, and then headed home. We saw approximately 53 Broncos fans at the airport, so I put my 49er pin on :) naturally.
I had an amazing time in Denver and I’m counting down the days until our next trip out there. So much to do and see!! Big thanks to Kyle’s fam for hosting us at their house and showing me all the fun Colorado spots. I didn’t want to leave…
